Green pea sprouts are very rich in calcium, iron, magnesium, phosphorus and potassium. They provide all the essential amino acids and a high level of protein (20-25%). They are very nutritious food suitable against anaemia.
Soak a suitable amount of seeds in water overnight. The next day spread them on the sprouting trays according to instructions on the packet and considering that during the sprouting process they will increase by at least 4 times in volume. Keep at room temperature and in good lighting conditions. Rinse the seeds 2-3 times daily until they are completely germinated, which occurs in 2-3 days. At each rinsing, try sprouts yourself to find your favourite time for harvesting. Sprouts can be kept dry and refrigerated up to 2 weeks. Before consumption, steam green pea sprouts fo few minutes to soften.
